Raisin Toast Overnight Oats

This is a delicious raisin toast inspired overnight oats recipe. May not taste exactly like the real thing, but delicious all the same. Overnight oats are a fantastic breakfast option as they are a good source of fibre, which provides fuel to our healthy gut bugs, keeps us regular and helps to keep us fuller for longer (read about fabulous fibre here, if you haven't already). Also, by using milk (or soy milk) and yoghurt in your overnight oats, this breakfast provides some protein which helps to keep us feeling satisfied and helps to maintain lean muscle mass. Also, they take less than 5 minutes to make the night before, then you have a couple of breakfasts good to go. So this is a filling and nutritious breakfast option, give it a try and let me know what you think!

What you need (serves 2-3): 

1 cup rolled oats 

1 tablespoon chia seeds

1 table spoon flax seeds or LSA 

3 tablespoons raisins or sultanas 

1 teaspoon ground cinnamon 

1 teaspoon vanilla essence 

 1 cup milk of choice 

3 spoonfuls of greek yoghurt 

 

What you do: 

1. Put all dry ingredients in a jar and mix to combine. Pour milk in and mix, then mix through yoghurt. 

2. Secure the lid onto the jar, and place in the fridge overnight. 

3. Enjoy in the morning on its own or with some extra yoghurt or fruit, or both!
